Classic Chicken Liver Pâté with Caramelized Onions and Fresh Cilantro Glaze

500 g (1 lb) fresh chicken livers 5 tablespoons oil 5 onions, grated 4 hard-boiled eggs, chopped A handful of fresh cilantro leaves 3 tablespoons sweet wine 2 tablespoons chopped walnuts 2 cloves garlic Salt and black pepper, to taste Grill the chicken livers over an open flame on both sides until all traces of blood have disappeared. Fry the grated onions in a deep skillet until golden brown. Add the chicken livers, oil, salt, pepper, walnuts, and sweet wine to the skillet. Stir well to combine. Transfer the mixture to a food processor, add the hard-boiled eggs, and blend until smooth and creamy. Transfer the pâté to a serving bowl and prepare the cilantro glaze: Place the cilantro leaves in a food processor, add the garlic cloves, 4 tablespoons oil, salt and pepper to taste, and 1 cup water. Blend until smooth. Pour the cilantro glaze over the pâté just before serving. Alternatively, drizzle the sauce around the pâté on the serving plate for an elegant presentation.Ingredients
