With a little creativity, even the simplest salad can become a centerpiece of the Rosh Hashanah table, enhanced with sweet flavors, interesting textures, and symbolic ingredients that reflect our hopes for the coming year.
1. Pomegranate and Carrot Salad with Honey Apple Dressing
Ingredients
3 large carrots, grated
½ cup pomegranate seeds (or less, if preferred)
2 apples, red or green, diced into small cubes
2 tablespoons honey
2 tablespoons olive oil
A pinch of cinnamon
Salt and pepper to taste
Instructions
In a large bowl, combine the grated carrots, pomegranate seeds, and diced apples.
In a small bowl, whisk together the honey, olive oil, cinnamon, salt, and pepper.
Pour the dressing over the salad, toss gently, and serve.
2. Tomato, Basil, and Honey Salad
A delicious and unexpected twist on the classic tomato salad.
Ingredients
5 large tomatoes, diced
3 tablespoons honey
3 tablespoons olive oil

Instructions

1–2 heads of lettuce, depending on size
2 medium raw beets, grated
2 large raw carrots, grated
3 tablespoons olive oil
1 tablespoon balsamic vinegar
3 tablespoons honey
Salt and pepper to taste
Instructions
Tear the lettuce into large bite-sized pieces and place in a serving bowl.
Add the grated beetroot and carrots.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
Just before serving, drizzle the dressing over the salad and toss gently.
