Skip the Pasta: Try This Healthy Zucchini Ravioli

Looking for a lighter take on an Italian favorite? Zucchini makes a wonderful substitute for traditional pasta, creating a meal that's flavorful, satisfying, and naturally gluten-free.
With its tender texture and mild flavor, zucchini pairs beautifully with rich tomato sauce and creamy cheese. It's also packed with vitamins, minerals, fiber, and antioxidants while remaining low in calories, making it a nutritious addition to your dinner table.
Whether you choose ravioli or lasagna, this recipe is sure to become a family favorite.
Step 1: Prepare the Tomato Sauce
Heat a little olive oil in a saucepan over medium heat.
Add:
- 1 onion, finely diced
- 1 tomato, diced
Season with:
- Salt, to taste
- Fresh or dried basil
Cook until the vegetables soften and begin to meld together.
Stir in:
- 1 small can tomato paste
- ¼ cup water
Reduce the heat and simmer for about 5 minutes.
Tip: This simple tomato sauce is incredibly versatile. Save the recipe to use on homemade pizza, meatballs, fish, or baked vegetables.
Step 2: Prepare the Cheese Filling
In a medium bowl, combine:
- Flavorful white cheese or ricotta
- ½ cup grated Parmesan cheese
- 1 egg
- Salt and black pepper, to taste
- Fresh or dried basil
Mix until smooth and well combined.
Step 3: Make the Zucchini "Noodles"
Trim the ends off the zucchini.
Using a vegetable peeler or mandoline, slice the zucchini lengthwise into long, thin ribbons.
These ribbons will replace traditional pasta sheets.
Step 4: Assemble the Ravioli
Lay two zucchini ribbons side by side vertically.
Place two more ribbons across them horizontally to create a cross.
Spoon about one tablespoon of the cheese filling into the center.
Fold each side toward the middle, enclosing the filling to form a ravioli.
Continue until all the filling has been used.
Arrange the ravioli seam-side down in a baking dish.
Spoon the tomato sauce over the top and sprinkle generously with grated cheese.
Alternative: Make Zucchini Lasagna
If you'd rather skip assembling individual ravioli, this recipe also makes a delicious zucchini lasagna.
Layer zucchini ribbons in the bottom of a baking dish.
Spread some of the cheese filling on top, followed by the tomato sauce.
Repeat the layers until all the ingredients have been used.
Finish with a generous layer of grated cheese.
Bake
Bake in a preheated 180°C (350°F) oven for about 30 minutes, or until the cheese is melted and golden.
Allow the dish to cool for a few minutes before serving—but not too long. It's best enjoyed while the cheese is still warm, soft, and wonderfully gooey.
Serve on its own for a light dinner, or pair it with a fresh green salad for a complete meal.
