Ingredients

  • 4 beets, peeled and thinly sliced

  • 1 container plain yogurt
  • ½ cup milk
  • 3 eggs
  • ½ cup rolled oats
  • 1 cup whole spelt or rye flour
  • Salt, to taste
  • 1 handful grated yellow cheese
  • 1 packet baking powder

Directions

  1. Preheat the oven to 180°C (350°F).
  2. Place all the ingredients in a large bowl and mix until well combined.
  3. Transfer the mixture to a lightly greased baking dish.
  4. Bake for about 30 minutes, or until the top is lightly golden and the center is set.

The frittata may seem slightly soft when it first comes out of the oven. Allow it to cool, then refrigerate for several hours. As it chills, it will firm up beautifully and the flavors will continue to develop.
