Finding dinners that are healthy, filling, and easy to prepare isn't always simple. Sometimes, though, the best recipes are also the simplest.
This two-ingredient skillet flatbread comes together in minutes and pairs beautifully with everything from fresh vegetables and cheeses to eggs, hummus, and homemade pizza toppings.
Better yet, it's a great way to build a balanced dinner rich in protein, fiber, vitamins, and minerals.
Why Choose Spelt Flour?
The star of this recipe is spelt flour, one of the world's oldest cultivated grains.
Unlike modern wheat, spelt has undergone far less breeding over the centuries. It naturally contains less gluten than conventional wheat while providing a good source of fiber, protein, B vitamins, iron, magnesium, and other important nutrients.
Many people also find spelt easier to digest, making it a popular choice for homemade breads and baked goods.
The Benefits of Yogurt
The second ingredient is plain yogurt.
Besides giving the dough its soft texture, yogurt contributes high-quality protein along with important nutrients such as calcium, potassium, magnesium, vitamin B12, and, in many products, vitamin D.
Calcium is especially important during childhood and adolescence, when the body builds much of its long-term bone strength. Adults also benefit from getting enough calcium as part of a balanced diet.
For the richest flavor and texture, yogurt with at least 3% fat works especially well.
Two-Ingredient Skillet Flatbread
Ingredients
- 1½ cups spelt flour
- 1 cup plain yogurt (3% fat or higher)
Optional:
- Pinch of salt
- ½ teaspoon baking soda
Directions
Mix the flour and yogurt together until a soft dough forms.
If using, knead in the salt and baking soda.
Divide the dough into six equal portions.
Lightly flour your work surface and roll each piece into a thin circle.
Heat a skillet over medium-high heat. If needed, lightly grease the pan with a small amount of oil.
Cook each flatbread for about 20 to 30 seconds per side, or until bubbles appear and light golden spots begin to form.
Remove from the pan and serve warm.
Delicious Serving Ideas
One of the best things about this flatbread is how versatile it is.
Try it with:
- Mozzarella, tomatoes, and fresh basil
- Hummus, hard-boiled eggs, and roasted eggplant
- Labneh with olive oil and za'atar or fresh herbs
- Cream cheese and roasted peppers
You can even turn it into a quick skillet pizza by adding tomato sauce, grated cheese, olives, corn, and oregano. Cover the pan with a lid and cook over low heat for another minute until the cheese melts.
Endless Possibilities
Simple recipes like this are easy to adapt to your family's tastes. Change the toppings with the seasons, add fresh vegetables, experiment with different cheeses, or create your own favorite combinations.
Sometimes the easiest dinners become the ones everyone asks for again and again.
