Homemade Potato Bourekas: Crispy, Golden, and Easy to Make
Skip the store-bought version and make delicious potato bourekas at home with a few simple ingredients and an easy puff pastry shortcut.

Potato bourekas are a simple, familiar, and beloved pastry—perfect for a family dinner, entertaining guests, or serving alongside hard-boiled eggs, Israeli salad, and tahini.
Instead of buying ready-made bourekas, you can easily make a delicious homemade version with golden puff pastry and a generous filling of creamy potatoes and fried onions. They require only a handful of simple ingredients and come out crisp, flaky, and irresistible.
Homemade Potato Bourekas
Ingredients
- 1 package puff pastry, thawed according to package directions
- 4 medium potatoes
- 1 large onion, finely chopped
- 2 tablespoons oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 egg, beaten, for brushing
- Sesame seeds, for sprinkling
Directions
Peel the potatoes, cut them into cubes, and cook them in a pot of water until completely soft.
Meanwhile, heat the oil in a skillet and sauté the onion until soft and golden.
Drain the potatoes well and mash them until smooth. Add the fried onion, salt, and black pepper, and mix well. Set the filling aside to cool.
Roll out the puff pastry on your work surface and cut it into squares in your desired size.
Place about a tablespoon of potato filling in the center of each square. Be careful not to overfill the pastries, as too much filling can cause them to open while baking.
Fold each square in half to form a triangle and seal the edges well with your fingers or the tines of a fork.
Arrange the bourekas on a baking sheet lined with parchment paper. Brush each one with beaten egg and sprinkle generously with sesame seeds.
Bake in an oven preheated to 400°F for about 20 to 25 minutes, or until the bourekas are puffed and beautifully golden.
Remove from the oven and allow them to cool for a few minutes before serving.
Want to Upgrade the Filling?
The classic potato and onion filling is delicious on its own, but you can easily add extra flavor.
Try mixing in some chopped parsley or scallions, or add mushrooms sautéed together with the onion. For a warmer, more seasoned flavor, add a little sweet paprika or a pinch of cumin.

One of the most important steps is allowing the potato filling to cool before placing it on the puff pastry.
Hot filling can soften the fat in the pastry and make it more difficult to achieve those crisp, flaky layers. Let the potato mixture cool before assembling the bourekas for the best results.
