Being that zucchini contains a lot of water, the challenge with this recipe is achieving a crispy coating without the fries becoming soft and soggy in the oven. The secret is to dry the zucchini thoroughly, use panko breadcrumbs, and leave enough space between the fries while baking. The result is delicious, crispy zucchini fries that make a healthy snack or side dish. This recipe is easy, nutritious, and quick to prepare.
Crispy Oven-Baked Zucchini Fries
Servings: 4
Ingredients
3 medium zucchini
⅓ cup all-purpose flour
2 eggs
1½ cups panko breadcrumbs
½ teaspoon sweet paprika
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil
Instructions
Preheat the oven to 220°C (425°F) using conventional top and bottom heat, or 200°C (390°F) using the convection setting. Line a large baking sheet with parchment paper.
Wash and dry the zucchini, then trim off the ends. Cut them into sticks approximately 7 cm (3 inches) long and 1 cm (⅜ inch) thick. If the centers are spongy and contain large seeds, remove them. Pat the zucchini sticks thoroughly dry with paper towels to absorb as much moisture as possible.
Prepare three bowls: one with the flour, another with the beaten eggs, and a third with the panko breadcrumbs, paprika, garlic powder, salt, black pepper, and olive oil. Mix the breadcrumb mixture thoroughly until the oil is evenly distributed.
Lightly coat each zucchini stick in flour, shaking off any excess. Dip it into the beaten eggs, then roll it in the seasoned panko mixture. Press gently to help the breadcrumbs adhere.
Arrange the coated zucchini sticks in a single layer on the prepared baking sheet, leaving space between them.
Bake for 20–25 minutes, carefully turning the fries halfway through, until the coating is golden and crispy and the zucchini is tender. Baking time may vary depending on the thickness of the fries and your oven.
Serve immediately while hot and crispy.
Tips for Extra-Crispy Zucchini Fries
Avoid overcrowding the baking sheet. When the zucchini sticks are too close together, the moisture they release becomes trapped, causing the coating to soften instead of crisp up. If necessary, bake the fries in two batches.
For the best texture, serve the zucchini fries straight from the oven. Avoid covering them or piling them into a deep bowl, as trapped steam will make them soggy.
Easy Yogurt Dipping Sauce
For a quick and refreshing dipping sauce, mix together:
½ cup plain yogurt
1 teaspoon lemon juice
A little minced garlic
A pinch of salt
Stir until smooth and serve alongside the warm zucchini fries.
Serving suggestion: For a meat meal, skip the dairy-based yogurt dip and serve the zucchini fries with tahini or a flavorful, seasoned tomato sauce instead.
