Hungarian Goulash for Passover: Simple, Fragrant, and Satisfying

A comforting dish with rich flavors, made with paprika, tomatoes, and melt-in-your-mouth beef

Ingredients

  • 1 kg entrecôte or short ribs

  • 3 onions

  • 3 ripe tomatoes

  • 1 head of cabbage

  • 1 small can tomato paste

  • 4 cups boiling water

  • 1/2 cup oil

  • 1 tablespoon salt

  • 2 teaspoons sweet paprika

  • 1 teaspoon black pepper

  • 1 teaspoon sugar

Instructions

Cut the meat into cubes and fry in a little oil until browned.

Chop the onions and add them to the pot along with the salt, pepper, paprika, and sugar. Add the boiling water and tomato paste.

Grate the whole tomatoes and add them to the pot as well. Bring everything to a boil and cook for about 5 minutes.

Lower the heat. Slice the cabbage into thin strips and add it to the pot. Continue cooking for about 1 hour.

If the liquid reduces too much during cooking, add more water as needed.
