Herb-Roasted Sea Bass for Your Pesach Table

A fragrant, herby fish that pairs perfectly with your holiday meals

Ingredients

  • 400 g fresh, cleaned sea bass

  • 1 green onion

  • 1 clove garlic, crushed

  • Salt and pepper

  • 1 sprig rosemary

  • 6 basil leaves, chopped

  • 2 stems fresh oregano, chopped

  • 1/2 tablespoon chopped parsley

  • A small amount of finely chopped chili

  • Olive oil

How to Prepare

Make 3–4 shallow slits on each side of the fish. Rub the fish with olive oil.

Mix the basil, oregano, parsley, chili, and garlic. Insert the mixture into the slits of the fish. Place the remaining mixture inside the cavity of the fish together with the rosemary sprig.

Bake the fish for about 15 minutes at medium heat. Check that the fish is tender. If it is not soft enough, return it to the oven for a few more minutes.
