Moroccan-Style Passover Pot Roast

A rich, slow-cooked beef recipe with caramelized onions, bay leaves, and warm spices

Ingredients

  • 1.5 kg (about 3.3 lbs) beef (cut #5)

  • 3 onions

  • 1/2 cup oil

  • 1 bunch fresh cilantro

  • 4 bay leaves

  • 1 teaspoon turmeric

Instructions

Place the beef in a pot of water and bring it to a boil.

Peel one onion and slice it into strips. Once the water is boiling, add the onion strips and the bay leaves, then lower the heat. Cook until the meat begins to soften, about 30 minutes.

Remove the meat from the pot and set aside the cooking liquid.

Slice the beef into thin pieces.

Peel the remaining two onions and slice them into strips. Heat the oil in a wide, shallow pot and sauté the onion strips until browned.

Arrange the sliced beef over the onions, then pour the reserved cooking liquid over the meat. If needed, add more water until the meat is fully covered. Bring to a boil.

Meanwhile, chop the cilantro.

Once the pot is boiling, sprinkle the turmeric and chopped cilantro over the meat.

Continue cooking for about another 30 minutes.
