Ingredients (about 100 cookies)

  • 6 cups almond flour

  • 2 1/4 cups sugar (preferably brown sugar)

  • Zest of 2 oranges (wash well and scrub the peel before zesting)

  • 1/2 cup freshly squeezed orange juice

  • 3 teaspoons vanilla extract

  • 3 eggs

  • A pinch of salt

  • 1/2 cup walnut oil (or canola oil for those who permit legumes)


Instructions

Preheat the oven to 170°C (340°F).

Mix all the ingredients together in a bowl until you get a soft but not sticky dough.

Roll into small balls, flatten slightly, and place on a baking sheet lined with parchment paper.

Bake for about 10–12 minutes for small cookies, or 13–15 minutes for larger ones.

The cookies should remain light in color — do not overbake.
