Easy Lemon Coconut Cookies
Quick to make, bursting with fresh lemon flavor, and perfect for Passover

Illustrative photo: Shutterstock1 1/2 cups ground (shredded) coconut 200 g powdered sugar 1 packet baking powder 1 lemon Juice the lemon and grate the zest. Sift the powdered sugar to remove any lumps. Mix all the ingredients well until you get a smooth, uniform mixture. With wet hands, shape the mixture into small balls. Place them on a baking tray lined with parchment paper, leaving enough space between each ball, as the cookies will spread while baking. Bake at medium heat for about 10–15 minutes (without fan/convection). Be careful not to overbake, so the cookies stay soft and not hard. Let cool before serving.Ingredients
