Easy Passover Rolls

Ingredients

  • 3 eggs

  • 1 cup matzah meal

  • 1 cup water

  • 1/4 cup oil

  • 1 teaspoon sugar

  • 1/2 teaspoon salt

  • 1/3 teaspoon baking powder

Instructions

In a bowl, mix the matzah meal with the baking powder. In a saucepan, bring the water, sugar, salt, and oil to a boil. Once boiling, remove from heat and add the matzah meal. Mix well until a sticky dough forms.

Add the eggs one at a time, mixing well after each addition.

Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper. Shape the dough into balls and place them on the tray, leaving space between each. Bake for about 10 minutes, then reduce the temperature to 180°C (350°F) and continue baking for about 30 minutes, until golden.

Versatile Kosher-for-Passover Rolls

Ingredients

  • 4 eggs

  • 2 cups matzah meal (preferably coarse rather than fine)

  • 1 2/3 cups boiling water

  • 2/3 cup oil

  • 1 teaspoon salt

  • A pinch of black pepper

Instructions

Place the matzah meal, salt, and pepper in a mixer. Add the oil and boiling water and mix for several minutes until a smooth dough forms. Gradually add the eggs and mix well.

Shape the dough into rounds or strips and place on a parchment-lined baking tray.

Bake at 200°C (400°F) for about 20 minutes. Lower the temperature to 160°C (320°F) and bake for an additional 30 minutes.

For variety, you can add ingredients such as sun-dried tomatoes, sautéed onions, or herbs like thyme, chives, or basil.

Light and Airy Passover Rolls

Ingredients

  • 4 eggs

  • 1 cup water

  • 1 cup matzah meal

  • 1/2 cup oil

  • 1/4 cup potato starch

  • 1 teaspoon sugar

  • 1/2 teaspoon salt

Instructions

In a saucepan, bring the water, oil, sugar, and salt to a boil. Once boiling, add the matzah meal and potato starch, mixing well until the dough pulls away from the sides of the pot.

Remove from heat and transfer the dough to a mixer. Mix with a paddle attachment for a few minutes. Gradually add the eggs while continuing to mix.

Transfer the dough to a piping bag. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper. Pipe the rolls onto the tray in your desired shape.

Bake for about 10 minutes, then reduce the temperature to 160°C (320°F) and continue baking for about 20 more minutes, until golden.
