Sweet and Savory Stuffed Roast Chicken with Dried Fruit
Juicy whole chicken filled with herbed rice, raisins, figs, and prunes, glazed with silan and spices

(Illustrative photo: Shutterstock)1 whole chicken 1 large oven roasting bag 5 tablespoons silan (date syrup) 1/4 cup oil 1/4 cup water 1 tablespoon Moroccan paprika in oil Coarse salt 1 1/2 cups cooked rice 1/2 cup dark raisins 8 dried plums (prunes) 5 dried figs 3 tablespoons pine nuts 5 tablespoons chopped parsley 1/2 teaspoon cinnamon 1/4 teaspoon cumin Salt Optional: 1/4 teaspoon chopped chiliIngredients

Instructions
Rinse the chicken and pat it dry, keeping the skin intact and clean.
Mix all the stuffing ingredients together and fill the cavity of the chicken. Pack the stuffing tightly and close the opening with two toothpicks.
Mix the marinade ingredients and rub well over the entire chicken, coating it on all sides. Place the chicken in a roasting bag and seal it well.
Preheat the oven to 220°C (425°F). Roast the chicken for about 1 1/2 hours, until very tender.
