Creamy Coconut Tapioca Ice Cream

Ingredients

  • 1/3 cup small tapioca pearls
  • 2 cups water
  • 1 can coconut cream
  • 3 tbsp pure honey or maple syrup (vegan)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

Bring the water to a boil in a medium saucepan.

Add the tapioca pearls and cook for about 10 to 12 minutes, stirring occasionally, until the pearls become mostly translucent and develop a soft, gelatin like texture.

Drain the tapioca and rinse with cold water.

In a mixing bowl, whisk together the coconut cream, maple syrup or honey, vanilla extract, and salt until smooth.

Add the cooked tapioca pearls and stir gently to combine.

Pour the mixture into a freezer safe container or ice cream mold.

Freeze for at least 4 hours.

About 5 minutes before serving, let the ice cream sit at room temperature to soften slightly for easier scooping.
