Made with bananas, Medjool dates, applesauce, and a touch of maple syrup, they come out moist and flavorful without using refined sugar. Best of all, the recipe comes together quickly with just a few easy steps.

Ingredients

  • 3.5 oz unsweetened applesauce
  • 4 Medjool dates
  • 1 banana
  • 1 cup whole wheat flour, sifted
  • 1 tsp apple cider vinegar
  • 1 tsp baking soda
  • 1/4 cup water
  • 1/4 cup natural peanut butter
  • Just under 1/4 cup pure date syrup
  • Maple syrup, enough to bring the total amount of syrup to 1/4 cup

How to Make Them

Preheat the oven to 350°F and lightly grease a muffin pan or line it with muffin liners.

In a large bowl, mix together the applesauce, peanut butter, date syrup, maple syrup, and apple cider vinegar until smooth.

In a separate container, blend the banana, dates, and water until mostly smooth. Add this mixture to the bowl and stir well to combine.

In a small bowl, whisk together the flour and baking soda. Add the dry ingredients to the wet mixture and stir until fully combined.

Divide the batter evenly into a muffin pan, filling about 12 muffin cups.

Bake for about 20 minutes, or until the muffins are lightly golden and a toothpick inserted into the center comes out clean.

Allow the muffins to cool slightly before serving.
