Oven Roasted Chicken With Orange and Caramelized Onion Sauce

Ingredients

  • 6 to 8 chicken drumsticks or thighs
  • 3 large onions, thinly sliced
  • 3 tbsp olive oil
  • 1 cup freshly squeezed orange juice
    (or bottled orange juice with no added sugar)
  • 1 tbsp silan or honey
  • 2 tbsp soy sauce
  • 1 garlic clove, crushed
  • 1/2 tsp mustard
  • 1/2 tsp sweet paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh thyme or rosemary, optional

Instructions

Preheat the oven to 375°F.

Heat the olive oil in a wide skillet over low heat.

Add the onions and cook slowly for about 15 to 20 minutes, stirring occasionally, until deeply golden and caramelized.

In a bowl, whisk together the orange juice, silan or honey, soy sauce, garlic, mustard, paprika, salt, and black pepper.

Place the chicken pieces in a baking dish.

Scatter the caramelized onions over the chicken and pour the sauce evenly over everything.

If using thyme or rosemary, sprinkle it over the top.

Cover the dish with parchment paper and then tightly with foil.

Bake for 1 hour.

Remove the cover and continue baking for another 20 to 30 minutes, until the chicken is golden and lightly caramelized.

Serving Tip

Spoon the rich orange onion sauce generously over the chicken when serving.

Fresh challah is highly recommended for soaking up every last bit of sauce left on the plate.
