Molten Chocolate Soufflé Cakes

Rich dark chocolate, a warm molten center, and a bakery-style texture make these easy chocolate lava cakes the perfect dessert for Shabbat, holidays, dinner parties, or any special occasion

Ingredients

  • 200 g (7 oz) high-quality dark chocolate

  • 150 g (⅔ cup) butter

  • 5 eggs

  • 1 cup self-rising flour

  • ¾ cup sugar

Optional Fillings

  • White chocolate cubes

  • Nutella

  • Chocolate bar pieces

  • Any favorite chocolate spread or filling

Instructions

  1. Melt the butter and dark chocolate together using a double boiler (bain-marie) or microwave.

  2. Remove from the heat and add the sugar. Stir well until the sugar is fully dissolved.

  3. Add the eggs one at a time, mixing quickly after each addition to prevent them from cooking from the heat of the mixture.

  4. Once the eggs are fully incorporated, add the flour and stir gently until just combined. Do not overmix.

  5. Fill individual soufflé or ramekin dishes about three-quarters full with the batter.

  6. If using a filling, add slightly less batter, place a cube of chocolate or a teaspoon of spread in the center, and cover with a little more batter.

  7. Bake in a preheated oven at 200°C (400°F) for exactly 15 minutes (or slightly less, depending on your oven).

  8. The soufflés should be risen and lightly browned on top, while the center remains warm and molten. Avoid overbaking.

  9. Serve immediately for the perfect gooey chocolate center.
