Old-Fashioned Orange Marble Cake: A Light, Moist, and Nostalgic Family Favorite

An old-fashioned cake is one of the highest compliments a recipe can receive — and this wonderful cake truly deserves it. This dairy-free cake contains no margarine and brings back memories of homemade treats baked by Mom in a traditional tube pan on the stovetop. While this version is baked in the oven, the flavor, light texture, and melt-in-your-mouth softness are pure nostalgia.

Ingredients

  • 5 eggs

  • 1 cup cane sugar

  • 1 cup grapeseed oil

  • 1 cup almond flour

  • 2 cups white spelt flour

  • 1 packet (or 1 tablespoon) aluminum-free baking powder

  • 1 cup freshly squeezed orange juice

Instructions

  1. Beat the eggs and sugar on high speed until light and fluffy.

  2. Reduce the mixer speed and gradually add the grapeseed oil.

  3. In a separate bowl, combine the almond flour, spelt flour, and baking powder.

  4. Alternately add the dry ingredients and the orange juice to the egg mixture, mixing until just combined.

Cocoa Swirl Mixture

Mix together until smooth:

  • 2 tablespoons cocoa powder

  • 1 tablespoon spelt flour

  • 1 teaspoon oil

  • 2 tablespoons orange juice

Baking Instructions

  1. Preheat the oven to 160°C (320°F) on the convection (fan) setting.

  2. Grease a tube pan or bundt pan.

  3. Pour about ¾ of the cake batter into the prepared pan.

  4. Add the cocoa mixture to the remaining ¼ of the batter and mix well.

  5. Pour the chocolate batter over the vanilla batter in the pan.

  6. Using a knife, gently swirl the two batters together in circular motions to create a marble effect.

  7. Bake for approximately 35 minutes.

  8. Insert a toothpick into the center of the cake. If it comes out clean, the cake is ready.

  9. Allow the cake to cool before serving.
