These soft, lightly sweetened seed rolls are enriched with honey and sugar, giving them a Mezonot blessing according to the recipe's tradition. They're packed with nutritious seeds and make a delicious addition to breakfast, brunch, or an afternoon snack.
Ingredients
4 cups all-purpose flour
1½ tablespoons dry yeast
1 cup mixed seeds:
1 tablespoon sunflower seeds
1 tablespoon sesame seeds
1 tablespoon pumpkin seeds
1 tablespoon flaxseeds
(Fill the remainder of the cup with additional mixed seeds)
½ cup sugar
½ cup honey
¼ cup oil
1 teaspoon salt
1 cup lukewarm water
1 beaten egg, for brushing
Instructions
Combine all the ingredients in a large bowl and knead well until a smooth, uniform dough forms.
Cover the bowl and let the dough rise for about 2 hours, or until it doubles in size.
Once risen, divide the dough into individual rolls and place them on a baking sheet lined with parchment paper.
Brush the tops with the beaten egg. For a richer color, you may mix the egg with ¼ teaspoon instant coffee before brushing (optional).
Bake in a preheated 180°C (350°F) oven until the rolls are golden brown.
Remove from the oven, allow to cool slightly, and serve.
Enjoy!
