Hearty Pearl Barley Soup with Carrots: A Simple, Nutritious Comfort Food

This simple, nourishing soup combines pearl barley, carrots, and onions to create a hearty and comforting meal. The barley naturally thickens the soup as it cooks, making it satisfying and perfect for cooler days.
Ingredients (Serves 4)
1 cup pearl barley
2 medium carrots, grated
1 large onion, finely chopped
Salt, to taste
Turmeric, to taste
A little oil for sautéing
6 cups water or vegetable broth
Instructions
Rinse the pearl barley thoroughly and drain well.
In a large pot, heat a little oil and sauté the chopped onion until golden.
Add the grated carrots and cook together with the onion for about 2 more minutes.
Add the rinsed barley, turmeric, and water or vegetable broth. Stir well.
Bring the soup to a boil.
Reduce the heat and simmer gently for 40–50 minutes, or until the barley is tender and the soup has thickened.
Season with salt to taste before serving.
Tip
If you prefer a thicker soup, add a little more pearl barley or reduce the amount of liquid slightly. For a thinner consistency, simply add extra water or broth as needed.
