Hearty Mixed Legume Soup Recipe: A Protein-Packed Winter Comfort Food

Legume soup is the perfect winter comfort food — warm, nourishing, and packed with protein, fiber, vitamins, and minerals. This hearty recipe combines a variety of legumes and vegetables, creating a satisfying one-pot meal that's both wholesome and filling.
Ingredients
½ cup white beans
½ cup red kidney beans
½ cup chickpeas
1 cup pearl barley (or regular barley)
1 large onion, chopped
2 medium carrots, diced
1 large potato, diced
3 garlic cloves, crushed
2 liters (8 cups) boiling water
1½ tablespoons chicken soup powder (or to taste)
Salt and black pepper, to taste
1 teaspoon turmeric
1 teaspoon ground cumin
8 celery stalks, finely chopped
Instructions
Step 1: Soak the Legumes
Place the white beans, red beans, and chickpeas in a bowl of water and soak overnight.
Step 2: Sauté the Vegetables
Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent.
Add the diced carrots and potato and stir well.
Add the crushed garlic and cook for another minute.
Step 3: Add the Legumes and Barley
Drain and rinse the soaked legumes.
Add them to the pot along with the barley.
Stir to combine.
Step 4: Simmer the Soup
Pour the boiling water into the pot and bring everything to a boil.
Add the soup powder, salt, black pepper, turmeric, and cumin.
Cover the pot and reduce the heat to low.
Simmer for approximately 2½ hours.
Step 5: Add the Celery
After 2½ hours, add the chopped celery.
Continue cooking for another 30 minutes, or until the legumes are completely tender.
Serving Suggestion
Serve hot with a slice of whole-grain bread or a crusty roll for a complete and comforting winter meal.
