Nothing warms the body and soul on a cold day quite like a bowl of homemade red lentil soup. This comforting recipe is rich in flavor, packed with nutrients, and comes together with simple pantry ingredients for a healthy, satisfying meal.
Ingredients
2 cups red lentils, thoroughly rinsed
2 tablespoons olive oil
1 onion, finely chopped
2 garlic cloves, crushed
1 large carrot, grated or finely diced
1 small potato (optional, for extra creaminess)
1 tablespoon tomato paste
1 teaspoon turmeric
1 teaspoon ground cumin
½ teaspoon sweet paprika
(or hot paprika for a spicier version)Salt and black pepper, to taste
6–7 cups boiling water
A handful of fresh cilantro or parsley for garnish (optional)
Instructions
Step 1: Sauté the Vegetables
Heat the olive oil in a large soup pot.
Add the chopped onion and sauté until translucent.
Add the garlic, carrot, and potato.
Stir and cook for 1–2 minutes.
Step 2: Add the Seasonings
Stir in the tomato paste.
Add the turmeric, cumin, paprika, salt, and pepper.
Cook briefly, stirring constantly, until the spices become fragrant.
Step 3: Cook the Soup
Add the rinsed red lentils.
Pour in the boiling water.
Stir well and bring the soup to a boil.
Reduce the heat and simmer for about 25 minutes, until the lentils are tender and the soup has thickened.
Step 4: Blend (Optional)
For a silky, velvety texture, partially blend the soup with an immersion blender. You can also leave it chunky if you prefer a more rustic consistency.
Serving Tips
Squeeze a little fresh lemon juice over each bowl just before serving.
Drizzle with a touch of olive oil for extra richness.
