Creamy Dairy Free Red Lentil Soup

Ingredients

  • 1 cup red lentils, rinsed and drained

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 2 garlic cloves, crushed

  • 2 carrots, peeled and diced

  • 1 medium potato, peeled and diced

  • 6 cups water or vegetable broth

  • 1/2 cup coconut cream or unsweetened almond milk (optional, for extra creaminess)

  • Salt and black pepper, to taste

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon turmeric

  • Fresh cilantro, chopped, for garnish

  • Olive oil, for drizzling

Directions

Heat the olive oil in a large soup pot over medium heat. Add the chopped onion and sauté until soft and lightly golden, about 5 to 7 minutes.

Add the garlic and cook for another minute, stirring constantly until fragrant.

Stir in the carrots, potato, and red lentils, mixing well to coat everything with the seasonings.

Pour in the water or vegetable broth. Add the cumin, turmeric, salt, and black pepper. Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes, or until the lentils and vegetables are completely tender.
