Following are three simple and healthy recipes that will make you appreciate carrots even more.
1. Baked Carrot Patties (Dairy-Free / Vegetarian)
Ingredients
4 carrots, finely grated
1 small onion, finely chopped
1 garlic clove, crushed
2 tablespoons oat flour or lentil flour
1 egg
A handful of chopped parsley
Salt, black pepper, and cumin, to taste
Instructions
Squeeze excess liquid from the grated carrots.
Combine all ingredients in a bowl and mix until well blended.
Shape into small patties and place on a baking sheet lined with parchment paper.
Bake at 190°C (375°F) for about 20 minutes per side, until golden and firm.
Serving Suggestion
Serve with tahini, yogurt, or a fresh vegetable salad.
2. Healthy Moroccan Carrot Salad
Ingredients
4 carrots, peeled and lightly cooked (or steamed), sliced into rounds
2 tablespoons olive oil
Juice of 1 lemon
1 garlic clove, crushed
½ teaspoon sweet paprika
A pinch of cumin
Salt and black pepper, to taste
Chopped parsley
Instructions
Combine all the ingredients in a bowl and mix well.
Refrigerate for about 30 minutes to allow the flavors to develop.
Serving Suggestion
Serve chilled as an appetizer or side dish.
3. Carrot and Sweet Potato Soup with Ginger and Cinnamon
Ingredients
4 carrots, peeled and chopped
1 small sweet potato, peeled and chopped
1 onion, chopped
1 garlic clove
A small piece of fresh ginger (or 1 teaspoon ground ginger)
½ teaspoon cinnamon
Water or vegetable broth, enough to cover the vegetables
Salt and black pepper, to taste
1 tablespoon olive oil
Instructions
Sauté the onion, garlic, and ginger in olive oil until fragrant.
Add the carrots and sweet potato, season with the spices, and stir well.
Add enough water or vegetable broth to cover the vegetables.
Simmer until the vegetables are tender.
Blend with an immersion blender until smooth and creamy.
Serving Suggestion
Garnish with pumpkin seeds or a spoonful of yogurt before serving.
