Crispy Parmesan and Roasted Hot Pepper Bites
Golden Parmesan crisps topped with roasted hot peppers create the perfect combination of crunchy, cheesy, and spicy flavors

(Illustration photo: shutterstock)200g (7 oz) Parmesan cheese, grated 5 medium hot peppers 2–3 tablespoons olive oil ½ teaspoon onion powder A pinch of ground allspice Slice the hot peppers into rounds about 2 cm (¾ inch) thick and remove all the seeds. Place the pepper slices in a bowl and toss with the olive oil, onion powder, and allspice until evenly coated. Arrange the peppers on a baking sheet lined with parchment paper. Bake in a preheated oven at 230°C (450°F) for 10–15 minutes, until the peppers begin to crisp slightly. Remove from the oven, allow them to cool, and blot away any excess oil with paper towels. Grate the Parmesan cheese if it is not already grated. On a parchment-lined baking sheet, place small mounds of Parmesan cheese, leaving space between each one. Top each mound of cheese with a roasted pepper slice. Reduce the oven temperature to 200°C (400°F). Bake for about 7 minutes, or until the cheese becomes golden and crispy. Watch carefully to prevent burning. Allow the crisps to cool completely before serving.Ingredients
