Ingredients
2 cups cooked black beans, or a cooked bean mixture
4 eggs, or 2 ripe bananas for a vegan version
1/4 cup coconut oil
1/2 cup natural date syrup or honey
1/4 cup coconut sugar
1/4 cup unsweetened cocoa powder or cacao nibs
1 teaspoon aluminum free baking powder
1/2 teaspoon baking soda
1 tablespoon apple cider vinegar
Optional: If you prefer a sweeter cake, add extra date syrup or agave syrup to taste.
For the Chocolate Glaze
1 tablespoon cocoa powder
2 tablespoons natural date syrup
1 tablespoon coconut oil
Optional: 1.75 ounces 85% dark chocolate
Directions
Preheat the oven to 350°F.
Place the cooked black beans in a food processor and blend until completely smooth.
Add the remaining cake ingredients and continue processing for 1 to 2 minutes, until a smooth batter forms.
Transfer the batter to a greased baking pan or divide it among paper lined muffin cups for individual portions.
Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and allow the cake to cool completely.
Prepare the Glaze
Combine the cocoa powder, date syrup, coconut oil, and dark chocolate, if using, in a heatproof bowl.
Melt gently over a double boiler, stirring until smooth.
Pour the glaze over the cooled cake.
For an extra decorative touch, sprinkle shredded coconut over the chocolate glaze before serving.
