Banana Dulce de Leche Doughnuts: Soft, Fluffy, and Filled with Sweet Caramel

Ingredients

For the Dough

  • 1 kg self-rising yeast flour

  • 6 eggs

  • 1 cup milk, slightly warmed

  • 150 g (5.3 oz) melted butter

  • 2 tablespoons brandy

  • 1 cup sugar

  • A pinch of salt

  • 1 teaspoon lemon zest

  • ½ teaspoon vanilla extract

  • 2 bananas

For the Banana Filling

  • 4 bananas

  • 1 tablespoon butter

  • A pinch of cinnamon

For Filling

  • 1 jar dulce de leche

Instructions

Prepare the Dough

  1. Place the flour, sugar, and eggs in the bowl of a stand mixer fitted with a dough hook and mix to combine.

  2. Add the warm milk and knead for about 5 minutes.

  3. Add all the remaining dough ingredients except the bananas and salt, and continue mixing for another 2 minutes.

  4. Add the salt and continue kneading until a soft, slightly sticky dough forms.

  5. Transfer the dough to a generously greased bowl, cover with plastic wrap, and let rise in a warm place for 2–3 hours, or until doubled in size.

Add the Bananas

  1. Cut the 2 bananas into small cubes.

  2. Once the dough has risen, gently knead the banana cubes into the dough until evenly distributed.

Prepare the Banana Filling

  1. Slice the 4 bananas into thin rounds.

  2. Melt the butter in a skillet and sauté the banana slices with the cinnamon for about 1 minute.

  3. Drain any excess liquid and allow the bananas to cool completely.

Shape the Doughnuts

  1. Divide the dough into approximately 40 equal portions and shape them into balls.

  2. Place each dough ball on a small square of parchment paper.

  3. Gently flatten each ball and create a small indentation in the center.

  4. Place 2–3 slices of the cinnamon bananas inside and carefully seal the dough around the filling.

Fry the Doughnuts

  1. Heat oil for deep frying.

  2. Carefully transfer each doughnut into the hot oil and fry until golden brown, about 2 minutes per side.

  3. Remove and drain on paper towels.

  4. Allow the doughnuts to cool completely.

Fill and Serve

  1. Using a piping bag or filling syringe, inject dulce de leche into each doughnut.

  2. If desired, dust with powdered sugar before serving.

These rich, fluffy doughnuts combine sweet banana, warm cinnamon, and creamy dulce de leche for an irresistible treat.
