Gluten-Free Sweet Potato Dumplings

Comfort food doesn't have to be complicated. These gluten-free sweet potato dumplings combine a soft, tender dough with a naturally sweet and savory filling made from mashed sweet potatoes and caramelized onions. They're hearty, satisfying, and perfect for a cozy family meal alongside a fresh salad or roasted vegetables.
Gluten-Free Sweet Potato Dumplings
Ingredients
For the Dough
2 cups sifted gluten-free bread mix
1 egg
1 tablespoon salt
1 tablespoon oil
For the Filling
2 large sweet potatoes, cooked and mashed
1/4 stick butter
1 onion, finely chopped
Salt and black pepper, to taste
For Cooking
Water
1 tablespoon oil

How to Make Them
Begin by preparing the filling. Heat a little oil in a skillet and sauté the chopped onion until golden and caramelized.
Add the onion to the mashed sweet potatoes and stir in the butter. Season with salt and black pepper to taste and mix well. Set aside to cool.
In a separate bowl, combine the gluten-free bread mix, egg, salt, and oil. Gradually add a little of the sweet potato cooking water, mixing until a soft dough forms that is smooth and easy to work with but not sticky.
Divide the dough into portions and roll each one into a circle on a lightly floured surface.
Place a spoonful of the sweet potato filling in the center of each circle. Fold the dough over to form a half-moon shape and press the edges firmly together to seal.
Bring a large pot of water to a boil. Add a little salt and oil to the water.
Carefully place the dumplings into the boiling water.
Once the dumplings float to the surface, continue cooking for about 7 minutes.
Remove with a slotted spoon and transfer to a serving dish.
Serving Suggestion
Serve warm with a fresh vegetable salad, sautéed vegetables, or a dollop of sour cream or yogurt for a comforting and satisfying meal.
