Gluten-Free Quinoa Pizza Muffins
Ingredients
1 cup cooked quinoa (prepared in 2 cups water and cooked until tender)
2 eggs
2 scallions, finely chopped
1 cup ricotta cheese
1/2 cup feta cheese, crumbled
Fresh basil, chopped
1/2 teaspoon salt
1 teaspoon paprika
1/2 cup red bell pepper, diced
Black olives, sliced
How to Make Them
Preheat the oven to 350°F (180°C).
In a large bowl, combine the cooked quinoa, eggs, scallions, ricotta cheese, feta cheese, basil, salt, paprika, red bell pepper, and olives. Mix well until everything is evenly incorporated.
Lightly grease a muffin tin or line it with paper liners.
Spoon the mixture into the muffin cups, filling each about three-quarters full.
Bake for about 30 minutes, or until the tops are lightly golden and the centers are set.
Allow the muffins to cool for a few minutes before removing them from the pan.
Serving Suggestions
Serve warm or at room temperature with a fresh salad, marinara sauce for dipping, or a side of crunchy vegetables. These naturally gluten-free muffins also store well in the refrigerator, making them a great make-ahead option for busy weekdays.
