Ingredients

For the Dough

  • 2 cups gluten-free all-purpose flour, such as Tami gluten-free flour
  • 1 stick (113 grams / 4 ounces) butter, softened (or baking margarine for a pareve version)
  • 1 egg
  • 1/3 cup silan (date syrup) or brown sugar
  • Optional: 1/4 cup finely ground nuts

For the Filling

  • 1/2 container date spread
  • 1 tablespoon ground cinnamon
  • A pinch of ground cloves (optional)

Directions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Melt the butter or margarine and allow it to cool slightly.
  3. In a large bowl, combine the flour, egg, silan or brown sugar, and ground nuts, if using. Add the melted butter and mix until a soft dough forms.
  4. In a separate bowl, combine the date spread, cinnamon, and cloves.
  5. Take a small piece of dough and flatten it in the palm of your hand.
  6. Place a small spoonful of the filling in the center.
  7. Carefully close the dough around the filling and roll it into a smooth ball.
  8. Place the cookies on the prepared baking sheet, leaving a little space between them.
  9. Bake for about 15–20 minutes, or until lightly golden.
  10. Allow the cookies to cool before serving.
