Rich, Comforting Orange Soup Everyone Loves

Ingredients

  • 4 tablespoons olive oil or canola oil

  • 2 large onions, chopped

  • 1 carrot, sliced into rounds

  • 2 medium sweet potatoes, peeled and diced

  • 2 medium potatoes (or 1 large potato), peeled and diced

  • 1 small butternut squash, or half of a large one, peeled and diced
    (The more butternut squash you add, the thicker and naturally sweeter the soup will be. My recommendation? Add extra!)

  • Water, enough to cover the vegetables

  • Salt and black pepper, to taste

  • ½ teaspoon turmeric

  • ¼ teaspoon cinnamon (don’t skip it!)

Instructions

  1. Heat a large pot over medium heat and add the oil.

  2. Sauté the onions until they become soft and translucent.

  3. Add all the chopped vegetables and stir well so they are coated with the oil and flavors.

  4. Add the turmeric, cinnamon, salt, and pepper.

  5. Pour in enough water to cover the vegetables and bring to a boil.

  6. Reduce the heat and simmer for about 30 minutes, or until all the vegetables are completely tender.

  7. Using an immersion blender, blend the soup until smooth and creamy.

  8. If the soup is too thick for your liking, add a little water until you reach the desired consistency.

Serving Suggestions

Ladle the soup into individual bowls and garnish with fresh cilantro or parsley if desired. (For kids, the garnish is completely optional!)

Serve with fresh bread or soup croutons for the ultimate winter comfort meal.
