(Illustration photo: shutterstock)These low-carb donuts taste surprisingly close to the real thing — but without the sugar and heavy carbohydrates. Soft, tender, and lightly flavored with vanilla, they're a delicious way to enjoy Chanukah treats without feeling deprived.
Ingredients
1 cup (100 g) almond flour (or finely ground almonds)
⅓ cup (75 g) unsalted butter, melted
¼ cup (50 g) powdered sweetener
4 eggs
1 tablespoon baking powder
2 tablespoons heavy cream
1 teaspoon vanilla extract
Instructions
Preheat the oven to 175°C (350°F).
Place the melted butter, heavy cream, and powdered sweetener in a mixing bowl and whisk until smooth.
Add the eggs and vanilla extract, and continue mixing until fully combined. Add the almond flour and baking powder, then mix until a smooth batter forms.
Transfer the batter to a well-greased nonstick donut pan or a muffin tin. Do not overfill the molds.
Bake for about 15 minutes, or until lightly golden.
Roll each donut in granulated sweetener if desired.
For a glazed version, melt together:
2 tablespoons butter
2 tablespoons heavy cream
2 tablespoons powdered sweetener
A few drops of vanilla extract
Drizzle or spread the glaze over the cooled donuts.
