2½ cups all-purpose flour 1 teaspoon vinegar ½ teaspoon salt ½ cup oil ½ cup warm waterIngredients (Makes 10–12 Pastries)
For the Dough:
Note: 1 standard measuring cup = 240 ml.
For the Filling:
500 g (1 lb) ground beef
2 onions, finely chopped
1 medium potato, grated
2 tablespoons breadcrumbs
Chopped parsley
1 egg
Black pepper, to taste
Sweet paprika, to taste
Ground cumin, to taste
Turmeric, to taste
Salt, to taste
Instructions
Combine all the dough ingredients and knead until you have a smooth, elastic dough. Let it rest for 30 minutes.
Divide the dough into 12 equal balls. Roll each ball into an oval about ½ cm (¼ inch) thick.
In a bowl, mix all the filling ingredients together until well combined.
Shape a portion of the meat mixture lengthwise around a medium-sized skewer.
Place the skewer with the meat filling in the center of the rolled dough.
Using a sharp knife, cut parallel strips along both sides of the dough, leaving the center intact beneath the filling.
Fold the strips over the filling, alternating from the right side and then the left side, creating a braided effect all the way down.
Brush the pastry with beaten egg and sprinkle with sesame seeds.
Bake in a preheated oven at 180°C (350°F) for approximately 30 minutes, or until golden brown.
Enjoy!
