Layered Ratatouille with Ground Beef: A Hearty Mediterranean Oven-Baked Recipe

This recipe has several layers and requires some careful preparation — but it is absolutely worth the effort. The result is a beautiful, flavorful dish packed with vegetables, herbs, and savory ground beef.
Layer 1: Roasted Tomato and Pepper Sauce
Ingredients
2 carrots, chopped
1 red bell pepper, roasted
1 yellow bell pepper, roasted
1 large onion, chopped
2 celery leaves
3 tomatoes, chopped
3–4 garlic cloves
¼ bunch parsley, chopped
1 small can (260 grams / 9 oz) crushed tomatoes
Sweet paprika, to taste
Black pepper, to taste
Salt, to taste
Oil for cooking
Instructions
Roast the bell peppers over an open flame or in the oven. Roasting gives them a wonderful depth of flavor.
Heat a little oil in a pot and sauté the onion until translucent.
Add the carrots and cook for about 3 minutes.
Add the chopped tomatoes and cook for another 5 minutes, stirring occasionally.
Stir in the crushed tomatoes. (If you don't have canned crushed tomatoes, grate 5–6 fresh tomatoes instead.)
Add the remaining ingredients, including the roasted peppers.
Season with paprika, black pepper, and salt.
Cover and simmer for about 20 minutes.
Allow the mixture to cool.
Blend everything using a food processor or immersion blender until smooth.
Set aside.
Layer 2: Ground Beef Mixture
Ingredients
1 kg (2.2 lbs) ground beef
2 large onions, finely chopped
1 bunch parsley, chopped
Black pepper, to taste
Salt, to taste
Instructions
Mix all ingredients together thoroughly until evenly combined.
Set aside.
Layer 3: Vegetable Topping
Ingredients
2 green zucchini
2 yellow zucchini
2 long, narrow eggplants
4–5 tomatoes
2–3 squash (or additional zucchini)
2–3 sweet potatoes
Instructions
Slice all vegetables into thin, even rounds.
Garlic Herb Oil
Ingredients
½ cup olive oil
5–6 garlic cloves, crushed
1 tablespoon dried oregano
5–6 fresh basil leaves
Salt, to taste
Instructions
Mix all ingredients together in a small bowl.
Assembling the Ratatouille
Lightly grease an oven-safe casserole dish or baking pan with olive oil.
Spread the blended tomato and pepper sauce evenly across the bottom.
Carefully spread the ground beef mixture over the sauce.
Arrange the sliced vegetables on top in overlapping rows, like roof tiles.
Keep a consistent pattern, for example:
Zucchini
Eggplant
Sweet potato
Yellow zucchini
Tomato
Repeat the sequence until the entire dish is covered.
Sprinkle lightly with salt.
Brush generously with the garlic herb olive oil.
Cover tightly with aluminum foil.
Baking
Preheat the oven to 200°C (400°F).
Bake for approximately 1½ hours.
Remove from the oven and allow to rest for a few minutes before serving.
