Classic Crispy Matzah Brei Recipe: A Passover Breakfast Favorite

Made with just a handful of simple ingredients, this traditional matzah brei is perfect for breakfast, brunch, or a Passover meal

Ingredients

  • 7 matzot

  • 4 eggs

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 11 tablespoons oil, for frying

Instructions

  1. Thoroughly soak the matzot in water, then crumble them into a large bowl.

  2. Add the eggs, salt, and black pepper, and mix well until fully combined.

  3. Heat 8 tablespoons of oil in a large skillet over medium heat.

  4. Pour the mixture into the skillet and cook until the bottom is golden brown.

  5. Carefully flip the matzah brei. Add the remaining 3 tablespoons of oil around the edges of the skillet.

  6. Continue frying until the second side is golden brown and crisp.

  7. Serve hot and enjoy!

For a sweet version, sprinkle with sugar, cinnamon, or drizzle with honey. For a savory version, serve as is or with your favorite toppings.
