Ingredients

For the Doughnuts:

  • 600 g (21 oz) low-fat white cheese (farmer's cheese), not soft cream cheese

  • 3 eggs

  • 3 tablespoons brown sugar

  • 4 level tablespoons flour

  • 4 tablespoons semolina

  • 1 tablespoon vanilla extract

  • 1 teaspoon rum extract

  • Zest of 1 lemon

For the Coating:

  • 50 g (1.8 oz) butter

  • 1 cup finely chopped walnuts or walnut crumbs

Instructions

  1. Combine all the dough ingredients in a bowl and mix well. Refrigerate for 1 hour to rest.

  2. Bring a large pot of water to a boil and add a pinch of salt.

  3. With wet hands, shape the mixture into balls about the size of ping-pong balls.

  4. Carefully drop the balls of dough into the boiling water and cook for approximately 10 minutes.

  5. Meanwhile, melt the butter in a skillet over low heat. Add the walnut crumbs and stir gently until combined and lightly toasted. Be careful not to burn the mixture.

  6. Remove the cooked doughnuts from the water and coat them evenly in the walnut crumb mixture.

Serving Suggestions

Serve warm, topped with a teaspoon of honey on each doughnut, or with your favorite fruit preserve or fruit spread, such as:

  • Citrus blossom honey

  • Jujube honey

  • Apricot fruit spread

  • Mixed berry preserve

  • Strawberry preserve

For an extra indulgent touch, serve with a side of sour cream.

Enjoy!
