Almonds are packed with high quality plant protein and are an outstanding source of heart healthy monounsaturated fats, commonly known as Omega 9. They are exceptionally rich in dietary fiber, which supports digestive health, and contain generous amounts of vitamin E, one of the body's most powerful antioxidants. They also provide an impressive range of essential minerals, including calcium, potassium, and magnesium.
Natural almond butter provides a wealth of valuable nutrients. Once babies are around six months old and have begun eating solid foods, natural almond butter can be introduced as part of their diet, making it a nourishing and calorie rich addition.
A Daily Habit Worth Adopting
Almonds have long been a regular part of my own family's meals.
Whenever I prepare my husband's lunch, I include a small snack bag containing an organic apple, a dried plum, a few dates, walnuts, and, naturally, almonds.
Research suggests that about eight raw almonds make an ideal daily serving for an adult. Of course, we're talking about fresh, unsalted almonds, not the roasted and salted varieties.
Homemade Marzipan in Minutes
Most people know that marzipan is made from almonds, but few realize how easy it is to prepare at home.
Simply place half a cup of raw almonds and half a cup of pitted dates into a food processor and blend until smooth.
Shape the mixture into a log, wrap it tightly in plastic wrap, and refrigerate.
Once chilled, the marzipan can be molded just like modeling clay. Create miniature challahs for Shabbat, flowers, hearts, or any design your imagination inspires.
A Healthier Alternative to Cookie Crusts
Many cheesecake recipes rely on crushed cookies for the crust.
I much prefer using almonds. Not only does an almond crust taste richer and more satisfying, but it is also significantly healthier.
One of my favorite desserts built on this simple almond base is a light, dairy free fruit cheesecake that's perfect as an afternoon snack or as a refreshing dessert after a hearty meat meal.
Dairy Free Fruit Cheesecake Cups
Prepare the Crust
Line a muffin tin with paper cupcake liners.
In a food processor, blend together:
½ cup raw almonds
2 tablespoons melted coconut oil
Press the mixture firmly into the bottom of each liner to create the crust.
Freeze for about 15 minutes.
Prepare the Filling
Meanwhile, blend together:
1 cup cashews, preferably soaked in water for several hours and then drained
⅓ cup coconut milk
6 tablespoons honey
A generous handful of frozen fruit such as strawberries, papaya, pineapple, or blueberries
For a chocolate version, simply add cocoa powder before blending.
Blend until completely smooth and creamy.
Assemble the Dessert
Remove the muffin tin from the freezer and spoon the creamy fruit mixture over the chilled almond crust.
Return the desserts to the freezer for at least two hours.
Before serving, garnish with grated lemon or orange zest, shredded coconut, or a drizzle of melted chocolate.
