Who says cake is only for dessert?

A wholesome homemade cake can be a wonderful addition to breakfast, an afternoon snack, or even a light evening meal alongside yogurt, cream cheese, or a cup of tea. When it's made with nourishing ingredients, it becomes much more than a sweet treat.

Carrot cake has been enjoyed for centuries. Long before refined sugar became widely available, carrots were often used to naturally sweeten baked goods. Their mild sweetness and moist texture made them a popular ingredient in breads and cakes, and they continue to do so today.

This version combines carrots with whole grains, oats, warm spices, and coconut sugar to create a soft, flavorful cake that's both satisfying and easy to make.

Ingredients

  • 3 eggs
  • 1 cup coconut sugar
  • 1½ cups whole spelt flour or rye flour
  • ½ cup rolled oats
  • 1 packet baking powder
  • ¾ cup oil
  • 1 cup grated carrot
  • 1 teaspoon cinnamon
  • Pinch of nutmeg

Optional toppings:

  • Chopped walnuts
  • Raisins

Why These Ingredients?

Carrots are naturally rich in beta-carotene, which the body converts into vitamin A.

Oats add fiber and help make the cake more filling.

Whole spelt or rye flour provides a wholesome alternative to refined flour while adding a pleasant nutty flavor.

Warm spices like cinnamon and nutmeg give the cake its comforting aroma and classic flavor.

Directions

Preheat the oven to 150°C (300°F).

Separate the eggs.

In a clean bowl, beat the egg whites until stiff peaks form.

In a separate bowl, whisk together the egg yolks, coconut sugar, oil, cinnamon, and nutmeg.

Add the flour, oats, and baking powder, mixing until smooth.

Stir in the grated carrots.

Finally, gently fold the beaten egg whites into the batter, taking care not to deflate them.

Pour the mixture into a lightly greased loaf pan.

If desired, sprinkle chopped walnuts or raisins over the top.

Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool slightly before slicing.

It's delicious on its own, but it's equally wonderful spread with a little cream cheese, just as people enjoyed carrot bread centuries ago.
