  • 1 tablespoon soup spice mix (like hawaij)

  • 1 tablespoon oats (for thickness)

  • Salt and pepper to taste

  • Water

Instructions:

Sauté the onion in a little olive oil.
Add the sweet potatoes, carrot, spices, oats, salt, and pepper.
Cover with water and bring to a boil.
Reduce heat and cook for about 30 minutes, until soft.
Remove the cinnamon stick and blend until smooth.

Serve with a spoon of sour cream, grated cheese, and a sprinkle of fresh herbs if desired.

Sweet Potato Mini Pizzas

A perfect dinner that is both filling and energizing.

Instructions:

Slice sweet potatoes into rounds.
Mix with olive oil, oregano, and coarse salt.
