  • 1 cup cooked edamame
  • 4 scallions, chopped

For the dressing

  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime or lemon juice
  • 1 tablespoon honey or silan
  • 1 teaspoon freshly grated ginger
  • 1 garlic clove, crushed
  • 1 teaspoon sweet chili sauce
  • Chili flakes, to taste

Instructions

Cook the soba noodles according to the package directions. Drain immediately and rinse under cold water to stop the cooking process and keep the noodles firm.

Meanwhile, combine the carrots, cucumber, peppers, cabbage, edamame, scallions, cilantro, and mint in a large serving bowl.

In a separate bowl, whisk together all of the dressing ingredients until smooth and fully combined.

Add the cooled noodles to the vegetables, pour the dressing over the salad, and toss gently until everything is evenly coated.

Finish with the toasted sesame seeds and refrigerate for at least 20 minutes before serving to allow the flavors to blend.
