One-Pot Fish With Apples, Orange, and Apricots

Ingredients

  • 4 white fish fillets, such as tilapia, sea bream, or sea bass
  • 1 orange, peeled and thinly sliced
  • 6 dried apricots, checked as appropriate
  • 2 apples, peeled and cubed
  • 2 tablespoons olive oil
  • A few garlic cloves, peeled
  • 1 tablespoon silan (date syrup)
  • ½ teaspoon sweet paprika
  • A pinch of turmeric
  • Salt and black pepper, to taste
  • 1 cup water
  • A handful of fresh cilantro or parsley

Directions

If desired according to your usual preparation method, soak the fish in salted or lemon water for about 30 minutes, then drain.

Arrange the apples, orange slices, dried apricots, garlic, olive oil, silan, spices, and water in a wide pot. Place the fish fillets on top.

Cover and cook over low heat for about 15–20 minutes, or until the fish is fully cooked and flakes easily and the sauce has reduced slightly.

Avoid stirring with a spoon, which can cause the fish to break apart. Instead, gently shake the pot from side to side as needed.

Before serving, sprinkle generously with fresh cilantro or parsley.
