Quick No-Yeast Rolls: Soft Homemade Bread in Just Minutes

This recipe is especially worth saving for busy days. It requires no rising time, no mixer, and no dough that needs to be watched for hours. Simply mix the ingredients, and within a short time you will have soft, tasty homemade rolls.

Quick No-Yeast Rolls

Ingredients (makes 8 medium rolls)

3 cups sifted white flour (about 420 grams)

1 packet baking powder (10 grams)

1 teaspoon salt

1 tablespoon sugar

1 egg

200 grams plain yogurt

¼ cup oil

⅓ cup milk, as needed

For brushing:

1 beaten egg

Sesame seeds or nigella seeds, to taste

Instructions

  1. Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.

  2. In a bowl, combine the sifted flour, baking powder, salt, and sugar.

  3. Add the egg, yogurt, and oil and begin mixing. Gradually add the milk until a soft, easy-to-handle dough forms. If the dough is already soft enough, there is no need to use all of the milk.

  4. Knead gently and only briefly, just until the dough comes together. Over-kneading may make the rolls less soft.

  5. Divide the dough into 8 portions, shape each one into a ball, and arrange them on the baking sheet with some space between them.

  6. Brush with beaten egg and sprinkle with sesame seeds or nigella seeds.

  7. Bake for about 20–25 minutes, until the rolls are puffed and golden. Baking times may vary slightly from one oven to another.

The Secret to Successful Rolls

Unlike yeast dough, this dough does not need to rise at all. The baking powder causes the rolls to rise as they bake. It is important not to add too much flour, and not to knead the dough excessively. It should remain soft.

These rolls are best served fresh and warm from the oven. Their texture and flavor will not be exactly the same as classic yeast rolls, but for a quick homemade solution, they are a delicious and practical option.
