Crunchy Asian Cabbage Salad With Cranberries and Sesame
Discover the secret to a perfectly crunchy cabbage salad with a delicious soy-honey dressing, sweet cranberries, and toasted sesame seeds.

Looking for a fresh, flavorful side dish that stays crunchy instead of turning soggy? Cabbage is one of the best ingredients for a satisfying salad. Unlike delicate lettuce, its sturdy leaves hold their texture beautifully, making it the perfect base for a delicious dressing.
This Asian-inspired cabbage salad combines crisp vegetables, sweet dried cranberries, toasted sesame seeds, and a tangy soy-honey dressing. The combination of sweet, savory, and slightly nutty flavors makes it a wonderful addition to almost any meal.
Serve it alongside chicken, fish, rice, or your favorite main dish for a colorful, refreshing side everyone will enjoy.
Ingredients (Serves 4–6)
For the salad:
500 g (about 1 lb) white cabbage, properly checked and free of insects, or a combination of white and purple cabbage
1 large carrot, cut into thin matchsticks or coarsely grated
⅓ cup dried cranberries
2 tablespoons sesame seeds
2 green onions, finely chopped
For the soy-honey dressing:
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon freshly squeezed lemon juice
1 tablespoon neutral oil, such as canola or sunflower oil
1 teaspoon sesame oil (recommended for extra flavor)
½ teaspoon freshly grated ginger (optional)
How to Make It
Prepare the cabbage. Slice the cabbage into thin strips, keeping them slightly thick enough to maintain their crunch. If you rinse the cabbage after slicing, drain and dry it thoroughly. Excess water can dilute the dressing and leave liquid at the bottom of the bowl.
Toast the sesame seeds. Heat a dry skillet over medium heat. Add the sesame seeds and stir constantly until lightly golden and fragrant. Transfer them immediately to a plate and allow them to cool.
Combine the vegetables. In a large serving bowl, mix the shredded cabbage, carrot, dried cranberries, and chopped green onions.
Prepare the dressing. In a small bowl or jar, combine the soy sauce, honey, lemon juice, neutral oil, sesame oil, and grated ginger. Whisk or shake well until the honey is fully incorporated.
Dress the salad. Just before serving, pour about two-thirds of the dressing over the vegetables and toss gently to coat. Taste and add more dressing if needed.
Add the finishing touch. Sprinkle the toasted sesame seeds over the salad and serve immediately.
The Secret to Keeping Your Cabbage Salad Crunchy
The trick to a perfectly crisp cabbage salad is avoiding excess moisture.
Unlike some cabbage recipes, there's no need to salt or massage the cabbage beforehand. Both techniques encourage the leaves to release water and soften, which can make the salad lose its crunch.
The soy sauce already adds plenty of saltiness, so taste the salad before adding any extra salt.
Making it ahead? Prepare the vegetables and store them in an airtight container in the refrigerator. Keep the dressing in a separate jar, and add it just before serving. Sprinkle the toasted sesame seeds on top at the last moment to preserve their crunch.
With its colorful ingredients, refreshing texture, and irresistible sweet-and-savory dressing, this simple cabbage salad is sure to become a favorite at your table.
