Cheese-Stuffed Sweet Potatoes

Servings: 4
Prep time: 10 minutes
Cook time: Approximately 55–75 minutes

Ingredients

  • 4 medium sweet potatoes

  • 1 tablespoon olive oil

  • 3.5 oz (100 g) crumbled feta

  • 5 oz (150 g) shredded mozzarella, divided

  • 3.5 oz (100 g) whole-milk ricotta cheese

  • ¼ teaspoon black pepper

  • 2 tablespoons chopped fresh chives or parsley

Instructions

  1. Prepare the sweet potatoes: Preheat the oven to 400°F (200°C). Wash and thoroughly dry the sweet potatoes, then pierce each one several times with a fork. Rub with olive oil and arrange on a baking sheet lined with parchment paper.

  2. Bake until tender: Bake for 45–60 minutes, or until the sweet potatoes are completely soft and a knife slides easily into the center. Larger sweet potatoes may need additional time.

  3. Prepare the cheese filling: While the sweet potatoes bake, combine the Bulgarian cheese or feta, soft white cheese, half the mozzarella, black pepper, and chopped herbs in a bowl. Mix well. There's usually no need to add salt, as the cheeses provide plenty of flavor.

  4. Fill the sweet potatoes: Once tender, carefully slice each sweet potato lengthwise, without cutting all the way through. Gently open them and lightly mash the flesh with a fork to create space for the filling.

  5. Add the cheese: Divide the cheese mixture evenly among the sweet potatoes, then sprinkle the remaining mozzarella over the tops.

  6. Bake until golden: Return to the oven for another 10–15 minutes, until the filling is heated through and the mozzarella is melted and lightly golden.

  7. Serve: Enjoy hot, alongside a fresh vegetable salad for an easy, satisfying meal.

Tip: For the best results, choose sweet potatoes of similar size so they cook evenly. If you prefer a more golden, bubbly topping, place them under the broiler for the final minute or two, keeping a close eye on them to prevent burning.
