Herbed Potato Frittata with Fresh Greens

Easy savory potato frittata with cilantro, parsley, dill, and green onions

Ingredients

  • 2 potatoes

  • 1 cup cilantro

  • 1 cup parsley

  • 1 cup dill

  • 3 eggs

  • 1 cup chopped green onions

  • Salt and pepper, to taste

  • Oil

Instructions

  1. Sauté the chopped green onions in 2 tablespoons of oil until softened.

  2. Grate the potatoes and add them to the pan.

  3. Stir and continue frying until lightly golden.

  4. In a bowl, mix the eggs with the herbs, salt, and pepper.

  5. Pour the egg mixture into the pan and cook the fritter on both sides until set and golden.

  6. Transfer to a serving plate and serve.
