Herbed Potato Frittata with Fresh Greens
Easy savory potato frittata with cilantro, parsley, dill, and green onions

2 potatoes 1 cup cilantro 1 cup parsley 1 cup dill 3 eggs 1 cup chopped green onions Salt and pepper, to taste Oil Sauté the chopped green onions in 2 tablespoons of oil until softened. Grate the potatoes and add them to the pan. Stir and continue frying until lightly golden. In a bowl, mix the eggs with the herbs, salt, and pepper. Pour the egg mixture into the pan and cook the fritter on both sides until set and golden. Transfer to a serving plate and serve.Ingredients
