Cherry Chocolate Mascarpone Dessert
A rich, gluten-free baked treat with dark chocolate, juicy cherries, and creamy mascarpone

(Illustration photo: Shutterstock)60 g dark chocolate 2 eggs + 1 egg yolk, at room temperature 60 g sugar (about ¼ cup + 2 teaspoons) 1/3 cup almond flour 110 g mascarpone cheese, brought to room temperature 450 g cherries 1/2 teaspoon almond extract 1/4 teaspoon salt 1 teaspoon cocoa powder Melt the chocolate using a double boiler. Set aside to cool. In a bowl, beat the eggs and egg yolk with most of the sugar and the almond extract until the mixture becomes pale and thick. Gently fold in the mascarpone cheese, almond flour, melted chocolate, and salt, mixing until smooth. Pour the mixture into a baking dish or individual ramekins. Arrange the cherries on top. In a separate bowl, mix the remaining sugar with the cocoa powder, then sprinkle it over the cherries. Bake for about 20 minutes at medium heat, until the top is set and slightly crisp while the inside remains soft. Serve warm or at room temperature. Optionally, serve with whipped cream on the side.Ingredients
