Savory Matzah Brei with Yogurt Cucumber Dip

A fresh twist on classic matzah brei with herbs and a crispy texture

Ingredients

3 light matzot
2 eggs
¼ cup milk
½ teaspoon salt
¼ teaspoon black pepper
10 basil leaves, chopped
1 tablespoon chopped parsley
Optional: 1 tablespoon chopped cilantro

For the Dip

1 container (about 1 cup) yogurt
1 cucumber

Instructions

Lightly moisten the matzot with water and break them into a bowl into coarse pieces.

Add the eggs, milk, salt, pepper, basil, parsley, and optional cilantro. Mix well.

Using a spoon, form small patties from the mixture. Fry them well on both sides until golden brown.

Transfer the patties to paper towels to absorb excess oil.

Finely chop the cucumber and mix it with the yogurt.

Serve the matzah brei patties with the yogurt cucumber dip.
