Cheesy Matzah Scramble with Za’atar
Quick Passover breakfast with eggs, melted cheeses, and crispy matzah — savory, satisfying, and ready in minutes

Instructions
Break the matzot into medium-small pieces. Pour the boiling water over them and mix until the matzot absorb the water. Add the eggs and seasoning, and mix.
Heat some oil in a pan, add the mixture, and fry for 3–4 minutes until the matzot are slightly golden. Add the Bulgarian and yellow cheeses, and cook for another minute until the cheeses melt.
Remove from the pan and serve with a sprinkle of za’atar on top.
