Simple Beet Salad with Lemon and Onion
Fresh and vibrant beet salad that is easy to prepare and perfect as a refreshing side dish

4 medium beets
1 onion (red onion works well)
3 tablespoons lemon juice
2 tablespoons oil
1 teaspoon sugar
Salt
Black pepper
Instructions
Cook the beets in salted water until tender. Remove from the water and let them cool. Slice into strips, cubes, or half-moons. Thinly slice the onion as well.
Transfer the vegetables to a bowl and season. Let sit for at least an hour before serving to allow the flavors to absorb.
